To cook this amazing chicken cacciatore, add garlic, Italian seasoning, diced tomatoes, mushrooms, onions, peppers, olives and broth.

  • cooking spray
  • 6 chicken breasts(6 oz.), boneless, skinless, chopped
  • 1 can diced tomatoes
  • 1 can tomato purée
  • 44g shallots, diced
  • 90g green pepper, chopped
  • 2 garlic cloves, minced
  • 1 tbsp. parsley
  • 1 tsp. basil
  • ½ tsp. oregano
  • ½ tsp. thyme
  • ½ tsp. salt
  • ½ tsp. pepper
  • 55g mushrooms, sliced
  1. Spray a non-stick cooking pan with cooking spray.
  2. Cook the chicken thoroughly over medium-high heat.
  3. In a large pot, add diced tomatoes, tomato purée, shallots, green pepper, garlic, parsley, basil, oregano, thyme, salt and pepper. Cook on low heat until tender (about 15 minutes).
  4. Add the chicken, cover and cook over low heat for 45 minutes. Stir occasionally.
  5. Add the mushrooms and cook uncovered for an additional 10 minutes.
